I admit I ch3at this weekend. I gave in to the temptation of ordering chicken empanada and the mango roll from Red Ribbon. From Friday to Saturday that is what I ate. Without rice. haha. Somehow, it gave me a empty feeling. I felt I was not satisfied with it. Maybe it’s already psychological but I am craving for fruits and veggies. Imagine! haha. Even I cannot believe it. So, today I got some fish from our freezer and remembered that I have cucumber.
Here is my lunch for today…

If my meal includes fried fish then it follows that I need to have soy sauce with kalamansi. My meal won’t be complete without it. That’s why our refrigerator is always stock up with kalamansi. Sometimes when I am in the mood for Century Tuna, either I used fish or soy sauce. But that’s all in the past now. Following the doctor’s strict order and my fear for my health I am now trying my best to avoid both. That’s why I kept on looking for better alternative. Good thing, my doctor made some recommendation. Today I tried using it. I baked some tuna for lunch and what I did was used cucumber soak in vinegar and pepper for additional flavoring. It is so yummy. Now, I have another option. This made me realized that it’s not the end of the world if I removed salt on my diet. haha.
Finally after the a long time I was able to bake. Actually I was planning on baking the cookie two weeks back but I was so busy that I can’t find time. I wanted to bake it as a bonding time for me and the little girl but I decided otherwise because I figured out that it can be really messy. haha. And I think my decision is right. I didn’t realized that I would have a hard time mixing the dough. haha. But I had fun and it’s just a simple recipe to follow.

While cooking chopsuey this morning, I am regretting the fact that I did not bought a bigger non stick pan when we were on the mall. The non stick pan were on sale but I don’t want the quality. You see my sister already gave me a Sunnex non stick but it did not last long. The black paint wore off and since I am worried that the rest of the paint would mixed with the food, I discontinue using it. Then I found one in SM. It’s just small but it’s heavy. I used it to fry eggs, bacon, ham and sautee small amount of veggies in it. I want a bigger one of that type. The question is how much is it? I bought that pan for Php 3k and it’s just small. But I guess, it’s really is a good investment. And I love using it. Maybe, when I have enough funds I would definitely buy one.
Marinated ...
Ever since I got my blood pressure problem I have been monitoring my food intake. I no longer used pork in cooking and if I crave for meat, I used beef or chicken. I do cook chicken meals almost every week because it’s my daughter’s favorite. But as much as possible since I fear that she might develop what they call ‘chicken skin’, I find some menu that would be pleasing to her taste buds. And so I tried yellow fin. I saw a simple recipe wherein all you have to do is marinate the yellow fin and then bake it. Simple! And it’s yummy! For the first time, my little girl was able to consume a slice of yellow fin. She prefer bangus and tilapia, you see. According to my sister, it’s delicious. The marinate was just right.
